Challenging the problematic detection of clostridial isolates causing late-blowing defect with MALDI-TOF MS

The present study aimed to evaluate the Clostridium spp. counts in corn silage, raw milk and KaĹar cheese identify clostridial isolates causing a late-blowing defect (LBD) potential using matrix-assisted laser desorption-ionization-time of flight mass spectrometry (MALDI-TOF MS). Lactate-fermenting spores (LFCS) were determined by most probable number method (MPN) 14 samples 12 20 cheese. 181 obtained from MPN gas-positive tubes. Gram staining, catalase oxidase activity, anaerobic development tests Scanning Electron Microscopy (SEM) imaging showed that 95 typical bacteria. Sixty-six could maintain viability during passage stock stages.
